Marisa's Carrot Ring

Marisa Perley, YR Assistant Manager and Librarian at PVLD shared this old family recipe. She says, "My mother used to make this recipe for special company and she served it with the main course instead of a traditional starch. Everyone always asked for the recipe."

May be prepared ahead of time, except do not add water or baking soda until just before baking.

1 cup shortening
1/2 cup brown sugar
1 1/2 cup grated carrots
1 1/4 cup sifted flour
1 egg
1 teaspoon baking powder
1 1/2 teaspoon lemon juice
bread crumbs
1/2 teaspoon baking soda dissolved in 1 tablespoon cold water

Cream sugar & shortening. Add egg and carrots. Mix well. Add sifted flour, baking powder and mix. Add lemon juice. Grease ring mold and sprinkle in bread crumbs, covering all sides of mold. If baking immediately, add baking soda mixed with water. Pour into mold and bake 25 minutes at 350 degrees.

Let stand 5 minutes before removing from mold.
