Teresa's Southwest Casserole

Teresa says this casserole is "always popular with friends and you can make it vegetarian by substituting cooked beans for the meat. I got this recipe from a moms group in the area."

1 pound ground turkey
1 chopped onion
1 c. or more salsa
1 pkg taco seasoning
1 c. or more frozen corn
1 c. yellow corn meal (or polenta)
1 c. flour
1/4 c. brown sugar
1 tablespoon baking powder
1 tsp. salt
1 c. milk
1/3 c. oil
1 egg
2 c. or more shredded sharp cheddar cheese

cook ground meat and onion over medium h eat until meat is no longer pin; drain off grease. Stir in salsa, taco seasoning and corn. Cook for about 5 minutes over low-med. heat. Spoon into ungreased baking dish.

Combine cornmeal, flour, sugar, baking powder and salt. Set aside. Combine milk, oil, egg and mix well. Add milk mixture to flour mixture and stir just until well blended. Stir in cheese. Spread over meat mixture. Bake uncovered is a preheated 350 degree oven for 30-35 minutes or until crust is golden brown. Top with additional salsa if desired. Serves 6-8

Option: can include or substitute meat with cooked beans such as pinto beans or black beans
